Cabbages are better for you if they are kept to their natural cycle of night and day after harvest. Doing so seems to treble the amount of anti-cancer chemicals they contain.
The work revealing this also demonstrates for the first time that even when separated from the plant, cabbages and other vegetables and fruit continue to maintain some of their circadian cycles.
To protect themselves against pests such as caterpillars and larvae, cabbages produce repellent chemicals called glucosinolates. These have been found to inhibit some cancers in rats and mice, and there has been some suggestion that they reduce cancer risk in humans.
